Almond Jelly on Sweet Spring Roll Wrapper Bowl

Ingredients:

For Spring Roll wrapper:
Spring Roll Wrapper
Brown Sugar
*Cut spring roll wrappers in to circles.
*Coat the wrappers with brown sugar.
*Place the wrappers in a wide mouth ladle and fry till golden brown
*Set Aside

For Almond Jelly:
Cold water
Caster sugar
Agar-agar
Evaporated milk
Almond essence
Peaches
Cherry

Procedure:
  • Place the water and sugar in a small pan.
  • Sprinkle over the agar-agar powder.
  • Bring the mixture to the boil and simmer for 1 minute.
  • Remove the pan from the heat and add the evaporated milk and almond essence.
  • Pour the mixture into a shallow 18 X 28 cm pan to set.
  • Chill for at least 1 hour.
  • Cut the jelly into diamond shapes, and serve with the fruits.
